Dairy-Free Hot Chocolate-for-One (Sugar-Free & Vegan)

Hot chocolate for one

Chocolate is without a doubt my favourite type of dessert. And I love finding way to create traditional favourites with wholesome, nourishing ingredients.

This sweet, warming hot chocolate-for-one makes for the perfect pick-me up at the end of the day! It’s dairy-free and sugar-free but every bit as rich and delicious as a traditional hot chocolate. It has quickly become my favourite nighttime treat. I love whipping up this yummy vegan drink, curling up in bed and enjoying a good book or fun TV show. I hope it brings a little sweetness and relaxation to your evenings as well!

Hot Chocolate-for-One

Serves 1

Ingredients:

  • 1-1/4 cups unsweetened almond or cashew milk
  • 2-3 tablespoons canned full-fat coconut milk
  • 1-1/2 tablespoons raw cacao powder or cocoa powder
  • 10-12 drops liquid stevia (or 1-2 teaspoons of your preferred sweetener)
  • Small pinch of cinnamon

Directions:

  1. Place almond/cashew milk and coconut milk in a small pot and heat on stove over medium-high heat until it seems ready to simmer — about 8 minutes.
  2. Stir in cacao/cocoa powder and let warm for another 1-2 minutes. Keep an eye on it so it doesn’t boil though as you don’t want the milk to burn.
  3. Turn off heat and stir in stevia and cinnamon.
  4. Pour into a high-powered blender, seal tightly and blend on medium speed for 5-10 seconds.
  5. Turn off blender and let liquid settle. It should have a nice frothy layer on top.
  6. Pour into a mug and enjoy.

Note: These are the measurements for an average mug. If your favourite mug is bigger or smaller you can pour the almond/cashew milk into the mug to 3/4 full, add coconut milk so it is 2cm from being full and pour that into the pot to heat. This will make you your own perfectly-portioned hot chocolate. You just may need to adjust the amount of cacao and stevia accordingly.
