I have had a complicated relationship with smoothies over the years. I love how convenient they are and how you can pack so much nutrition into one glass without sacrificing taste. But as much as I enjoyed smoothies in the moment, I often found myself feeling hungry, cold and craving solid, warm food an hour later.
I think a big reason for that was all my smoothies were loaded with fruit. Although fruit has tons of vitamins and minerals and is great to incorporate into your diet, it unfortunately also comes with a lot of sugar which can lead to blood sugar spikes and crashes and doesn’t offer the same kind of satiety as fat and protein.
So, I got to work and created this green smoothie. It’s packed with vitamins and minerals, has multiple servings of vegetables you won’t even taste, has protein and fat to keep you full, and its sweetened with stevia to give you a little pop of yummy sweetness without an energy crash.
Super-Creamy Sugar-Free Green Smoothie
Makes 1 meal or 2 snacks
- 2 cups packed kale or spinach
- 1 cup unsweetened almond milk
- 3 tablespoons full-fat coconut milk
- 1/2 a ripe avocado
- 1 scoop Vega One All-In-One Nutritional Shake in French Vanilla
- 4 ice cubes
- Place all ingredients in blender in listed order.
- Once fully combined, check consistency. If you like it more liquidy you can add more almond milk but otherwise it’s good to be transferred to a glass or travelling jug and enjoyed!
Note on the kale/spinach: If you are new to vegetables in your smoothie I recommend starting with spinach as it has a milder flavour and smoother consistency than kale and you won’t even know it’s there.
Note on the Vega One: This is what gives the smoothie its flavour so it would be hard to go without it. You could try subbing in your preferred protein powder with a pinch of vanilla and stevia but I don’t know how it will turn out.
