My Recent Healthy Eats 6

Welcome to My Recent Healthy Eats — where every other Friday I recap some of the healthy things I’ve been eating over the last couple of weeks. If you want to follow along with all the yummy things I’m eating you can follow me on Instagram @sheelagh.daly. I share my favourite Instagram posts here in the series as well as some meals I didn’t get a chance to share yet and I also include links to all the recipes I used so you can make these nutritious creations for yourself! Now, onto the food…

Breakfast at Eggspectations

Egg-free breakfast at Eggspectations

When I first discovered I had food allergies I worried about whether I’d be able to eat at restaurants ever again. Fortunately with a little bit of creativity and some clear communication, I believe it is possible to find something to eat at just about any restaurant. Case in point: this incredible egg-free breakfast at Eggspectations. That’s right EGGSpectations. Even at a place where the food that can have me curled up in the fetal position for the rest of the day is in the name, I can still find something to eat! I simply asked  for the veggie omelet without the eggs and a side of bacon to replace the missing protein, and voilà! A delicious, egg-free breakfast at a place that specializes in eggs!

Toasted pumpkin seed butter

Pumpkin seeds are little powerhouses of nutrients. They’re loaded with magnesium which helps to lower stress and relax muscles and zinc which is important for our immune systems and for senses like sight and taste. Unfortunately, sometimes I find it hard to work enough pumpkin seeds into my diet. That was until I discovered this creamy toasted pumpkin seed butter from Oatmeal with a Fork. It is seriously the yummiest way to enjoy these nutrient-dense seeds. Enjoy it slathered on toast, an apple or banana or even by itself on a spoon!

Butternut squash soup

In an effort to save money my strategy at the grocery store is usually to buy whichever vegetables are on sale and then I figure out what to do with them later. It does require a little creativity but almost always ends deliciously. In this spirit I picked up a super-cheap butternut squash and a few days later stumbled across this five-spice butternut squash soup recipe from The Full Helping. I followed the recipe pretty closely with the exception of subbing in leek for celery because that’s what I had on hand, using homemade bone broth for a boost of nutrients and adding in some gelatin at the end for a little protein power. Gelatin is such an easy, healthy addition to soup. Just don’t be alarmed when the soup cools and hardens (like jello), it will melt back into soup when heated.

Chicken curry cauliflower rice

I picked up this gem of a recipe from Leanne Vogel of Healthful Pursuit‘s book The Keto Beginning. Although I don’t follow a ketogenic diet, Leanne’s book and her blog have taught me so much about loving healthy fats and how to incorporate them into more of my meals. This was probably my favourite recipe from her book and I make it all the time. Curry, coconut, cauliflower rice and naturally-raised chicken — what’s not to love?

Chocolate and peanut butter

Sugar-free chocolate and peanut butter

This is not your average sugar-laden chocolate-peanut butter dessert. It’s chocolate and peanut butter done in an insanely healthy but still oh so yummy way. I simply buy cacao paste (it’s the pure unsweetened version of chocolate) which comes in flat, shattered pieces and then dip them in all-natural peanut butter. It’s all the yummy flavours in a super nutrient-rich package!

Happy Family Day long weekend!

That’s all folks! I hope you have wonderful long weekends and that this edition of My Recent Healthy Eats gave you some ideas for yummy creations to whip up for next week!
