My Recent Healthy Eats — #5

If you’re new to My Recent Healthy Eats, this is a bi-weekly series where I recap all the healthy things I’ve been eating over the last couple of weeks. Now, onto the food…

1. Flourless vegan black bean brownies

These flourless vegan black bean brownies from Minimalist Baker may be my favourite thing I made in the last couple of weeks. You would never guess the main ingredients in these beauties are simply black beans and cocoa powder. I used half the sugar and a bit of stevia and they were perfect. They were soft, gooey and so incredibly satisfying. I highly recommend this recipe if you’re on the hunt for healthier treats. You can even make a big batch, put them in the freezer and warm them up as needed!

2. Pesto quinoa bowl

I had some cannellini beans I wanted to use up so I went on the hunt for just the right recipe. That’s when I stumbled across this pesto quinoa bowl from Orchard Street Kitchen. I happened to have homemade vegan pesto in my freezer that I had made a while ago so it seemed meant to be. It came together beautifully and was really delicious.

3. Lentil stew

I don’t think a week goes by that I don’t toss a bunch of vegetables in a pot and see what happens. This time I had some carrots, celery, savoy cabbage, green peppers and spinach to use up as well as a big bag of lentils. So I tracked down this lentil stew recipe from Simply Recipes which acted as inspiration. I went without the sausages and instead of the bacon used organic bacon lardons from The Healthy Butcher. I used the herbs and spices the recipe recommended along with all my vegetables and my homemade bone broth. It was ridiculously delicious. Another example of kitchen improv turning out beautifully!

4. Salmon cakes, curried cabbage and chili

In case you didn’t hear me raving about these salmon sweet potato cakes from The Little Honey Bee in my roundup of my favourite recipes from around the blogosphere, I’ll do it again…. they are sooooo good. Seriously. Below them is some shredded cabbage and carrots tossed in curry powder and turmeric that I was testing out for my curried cabbage and chickpeas recipe and to the right is a veggie-loaded organic ground beef chili I’m hoping to share with you all soon. I did all this cooking in one day so I would have meals for the week. It’s all about the meal prep!

5. Hummus and all the veggies

If you struggle with finding healthy snacks to eat when you have people over, consider doing what my friends and I do when we play board games or see movies or *cough* watch The Bachelor *cough*. This week we chopped up a massive amount of veggies with three different kinds of Humm! Hummus (caramelized onion is my favourite!) along with some other easy, healthy snacks and fresh watermelon and blueberries for the rose ceremony dessert. It made for the perfect evening — no fast food required!
