My Recent Healthy Eats — #2

It’s time for the second installment of my new bi-weekly series, My Recent Healthy Eats, where I share some of the yummy and nutritious meals and snacks I’ve enjoyed over the last two weeks. If you haven’t had a chance yet, check out My Recent Eats #1 where you’ll find recipes for breakfast cookies, sweet potato chickpea curry and a fall-inspired quinoa salad. Now, onto my most recent yumminess!

1. Super-creamy sugar-free green smoothie

I’ve been having this sugar-free green smoothie so often over the last few weeks I had to go ahead and share the recipe with you all last week. If you haven’t had a chance to check it out, you totally should. It’s loaded with vitamins and minerals and is sugar-free but it’s so yummy you would never guess!

2. Nut-free cookie dough balls

I make these nut-free cookie dough balls from Peachy Palate at least once a month so it is about time I shared them with you all! (Update: Unfortunately this recipe is no longer available online but there are so many great nut/seed bites out there, you can’t go wrong!)

3. Matcha tea latte

Between work, class and auditions I have had a lot of early mornings and pretty late nights the past couple of weeks. But I was also determined to take a break from coffee. Rather than cut out caffeine entirely and deal with the sudden fatigue and headaches during these important weeks I decided to switch over to the healthier option of green tea. I based my own personalized morning drink off the matcha tea latte recipe offered on Nutrition Stripped. I think I’ve now perfected it and will be sharing it with you soon!

4. Toasted oatmeal to-go

I mentioned this delicious toasted oatmeal recipe in my post on my favourite recipes from around the blogosphere. I hadn’t made it in a little while but since my fridge was pretty empty yesterday as I was preparing to head out of town for the holidays, I turned to this old favourite that mostly only needs pantry staples for a quick breakfast to take with me to work. To top it off I sprinkled it with some ground flax because that stuff belongs on everything!

5. Ratatouille with organic sausages

Oh, ratatoille, the recipe you can get super creative with and it still turns out yummy every time. Toss some combination of chopped bell peppers, onions, zucchini and eggplant in a pot with fresh or canned diced tomatoes and minced garlic. Add some herbs like bay leaves and thyme, let it simmer and BAM! Meals for days. I also baked some organic, naturally-raised herbed sausages from The Healthy Butcher, sliced them into rounds and stirred them into the delicious concoction. It doesn’t look like much in this photo because my only chance to snap a photo was while I was at work but it tasted so good! I know kitchen improv isn’t everyone’s favourite thing so I will share a recipe for this incredibly easy and nutritious dish on the blog soon.

6. Vegan gluten-free crepes

If you have any kind of dietary restrictions or allergies you know how challenging it can be to eat out at times. So when a friend of mine mentioned Hibiscus Café — a restaurant that offers vegan, gluten-free crêpes I was all over it. Since discovering my egg allergy a couple of years ago I haven’t had crêpes and I have missed them soooo much. This beautiful buckwheat crêpe was stuffed with spinach, mushrooms, basil, tomato, and topped with avocado and a drizzle of pure maple syrup. If you’re in the Toronto area and looking for a vegan/vegetarian/gluten-free/organic option you should definitely check them out.
