I am so ridiculously excited to announce that I am officially done my nutrition classes and have even completed my oral exam! Now it’s just 6 weeks of intense studying for my final exam and then — so long as everything goes smoothly *fingers crossed* — I’ll officially be a Registered Holistic Nutritionist!

It has been an intense year. Balancing multiple jobs and school, all while trying to still see friends and make room for self-care for the sake of my sanity hasn’t always been easy. But I am so grateful I was able to push through it. I met so many wonderful people and learned so much valuable information that I can’t wait to share with my friends, family and future clients!

But enough about me, let’s get to the yummy food that got me through this last month of school!

1. Tahini Chicken and Carrot Noodles

I have made this tahini chicken and carrot noodle bowl from Inspiralized before and loved it. But this time I took it to the next level by doubling the recipe, replacing half the suggested olive oil with sesame oil which is so incredibly flavourful and also adding in some broccoli and cauliflower for extra veggies. Delish!

2. Salads in Jars

I have been wanting to go camping for the last few summers as it is one of my favourite things but life kept getting in the way. But not this summer! I was so incredibly happy to finally get to go camping with some friends. Camping with food allergies has its challenges but with a little prep it’s totally doable. For my lunches I divided edamame, carrot slices, cherry tomatoes and spring greens amongst 3 jars, then prepared another jar of toasted seeds, olive oil, balsamic vinegar, Dijon mustard and sea salt as the dressing. When kept in a cooler the veggies stayed totally fresh and made great salads over the course of 3 days.

3. Whole Roasted Cauliflower

If you ever need a side dish that looks fancy but is actually ridiculously easy, this whole roasted cauliflower from Nom Nom Paleo will quickly come to the rescue. Super easy but also beautiful and delicious!

4. Spicy Vegan Potato Curry

I can never get enough curry! This spicy vegan potato curry adapted from allrecipes is a great one. I added some sliced collard greens because leafy greens belong in everything!

5. Raw Vegan Brownies

There’s no denying I am pretty obsessed with raw desserts like my cacao coconut cups or raw vegan date squares. A lot of raw desserts though can still have a fair bit of sugar added through dried fruit or liquid sweeteners. They’re still a huge improvement over traditional sweets but when I want to cut down on my sugar intake, raw treats like these hemp and almond chocolate bites from Including Cake are perfect. A rich, chocolatey treat made entirely of healthy ingredients is pretty magical!
