April Healthy Eats

I have loved writing my My Recent Healthy Eats posts over the last few months. But I also know what a creature of habit I am when I find recipes I love and how  quickly I might run out of exciting recipes to share with you so frequently. So to shake things up I thought I’d switch over to a monthly version where at the end of each month I recap my absolute favourite healthy eats from the past month.

1. Rice, Edamame & Broccoli Salad

Sometimes it just seems that every week is busier than the last! When that happens, super quick recipes like this wild rice and broccoli salad with edamame from Running on Real Food can be lifesavers. I made a big batch of 5-grain rice blend from Bulk Barn the night before and then tossed it in with the other ingredients for this dish that came together in under 30-minutes and made 4 servings. Meals for days!

2. Soba Noodle Salad with Miso Dressing

It’s so hard to pick a favourite recipe of all the yummy things I’ve had this month, but this soba noodle salad from Goop is definitely near the top. I doubled the recipe (because more meals from cooking once is the best!) and replaced the chicken with organic edamame. Soba noodles are a nutritious and yummy alternative to pasta and when combined with all the veggies in this dish, there’s all kinds of nutritiousness waiting for you. So good!

3. Easy Cucumber and Tomato Salad

This salad is insanely easy, can be prepared in just a couple of minutes and is incredibly nutritious. Simply cut up half a cucumber, two small tomatoes, sprinkle on 1/2 a tablespoon of raw hemp seeds, drizzle on 1 teaspoon of flax oil, or other oil you have on hand, toss in a sprinkle of Himalayan salt and you’re done! Great as a healthy snack or as a side to whatever else you have planned for dinner.

4. Spicy vegan chili

This 30-minute 1-pot Mexican chili from The Vegan 8 is so flavourful and unbelievably easy (Update: Sorry, this link is unfortunately no longer active! I hope you’re able to find a similar simple chili recipe!) I changed the recipe up a little by adding an extra 1/2 cup of corn because I loooove corn in chili and a small zucchini because I’ll never turn down an opportunity to throw in an extra vegetable! I also doubled the tomato sauce called for (so used 1/2 a cup total) and 2 tablespoons of tomato paste to make it a little more tomatoey. This dish is so nutritious and satiating.

5. Squid Rings and Zoodles

I love when improvised dishes turn out delicious. I bought a bag of squid rings in a bit of an impulse buy months ago and didn’t know what to do with them until inspiration suddenly hit a couple weeks ago. I cooked them up in a pan with olive oil, garlic and a small pinch of crushed red peppers. Then I tossed in a couple of spiralized zucchinis to warm them and when it was all done topped it with a squeeze of fresh lemon juice and a pinch of Himalayan salt. It was so easy but felt so fancy!

6. Chickpea Kale Curry

This chickpea kale curry from Goop makes for a great post-workout lunch! Healthy fats from the coconut milk, protein from the chickpeas and starchy carbs from the sweet potato — it’s perfection. I made the recipe pretty much as directed with the addition of a cubed eggplant which soaked up the curry sauce and was delicious. I highly recommend it!

7. Glazed Salmon and Roasted Veggies

I love trying out different salmon recipes and this month I was inspired by this honey mustard salmon from Dinner at the Zoo. I basically did equal parts honey and Dijon mustard and threw in a splash of coconut aminos, a little olive oil, a pinch of onion powder and a sprinkle of Himalayan salt. I told my sister about it and she used it for barbecued pork so I bet it’s nice on a variety of dishes. Definitely worth trying! And of course, paired with a bunch of vegetables roasted in coconut oil, because you know me… #alltheveggies.
